Since a few members also have VFRs (both 750 and 800), I figured I'd chime in with the one I bought last hear.
It's a 2000 VFR800FI with 34K miles on the odometer when I bought it.
I wanted a 5th Gen as it was Pre-VTEC and has the gear drive cams like its big brother.
Mechanically the bike is sound, cosmetically not so good. But I'll be replacing the bodywork eventually.
So far I've installed a Traxxion Dynamics AK-20 cartridge kit up front, giving spring preload, compression, and rebound adjustment. And I installed a Penske 8983 shock in back.
While I had the upper cowl and forks off, I also went and swapped out the incandescent bulbs for LED in the instrument panel. Now I everything is nice and bright, day or night. And installed a set of Heli-Bars.
Since I had to remove the OEM exhaust headers to install the Penske shock, I went with the new design Dekelvic stainless system as well.
I removed the O2 sensors ('00-'01 had them along with a cat) and installed a PCV with O2 eliminator plugs.
The bike came with a Staintune high-mount slip-on, which mated to the new Dekelvic headers.
Now, not only does the old fat lady sound good, she actually handles pretty good too!
Still have a way to go (esp. with bodywork), but at least I can ride her while buying it piecemeal.
The prior owner laid her down on the left side, so the bodywork is cracked up around the left turn signal.
I'll be swapping the yellow for red to match the RC51.
While the yellow is highly visible, it just doesn't suit me.
