Got a 2002 RC. Topped off Coolant at the right radiator, ran very rough at first start up and coolant coming out the bottom of the coolant resv. Figured it was the overflow coming out because is stopped after a minute. Rode it and barely make it out the subdivision before it hit over 260 degrees. Drained the oil and found the worst. Water in the crankcase. Any ideas or help will be greatly appreciated. Bike ran fine before I topped off the coolant, so I'm hoping I don't have to do a major breakdown or motor swap.

Sounds like their was air in your coolant system that allowed steam to build up and popped your head gasket(s).

260 degrees is tough to come back from.:(

At best, you blew a head gasket. At worst, you cracked a head or block. Even if you find that the head gasket blew, you could still have a warped head too and that will have to be checked out. Good luck.

ETA: You did not likely do the damage by filling up the coolant, the problem is the reason that you needed to add coolant in the first place.
